Calamondin

Picked up a Calamondin tree at the garden center weeks ago and it is now growing nicely on the patio. It is loaded with fruit, getting bigger every day. It was advertised as 'the new lime'. Anybody familiar with this citrus? Any recipes besides marmalade?

    We used to have a tree in our backyard until the county decided to cut it down in order to avoid some disease to the citrus fruits from spreading. Our tree was fine .. but it was mandated every citrus fruit tree be cut down. Anyway my wife used to make this fantastic Calamondin Cake that was to die for. Here is the recipe:

    CALAMONDIN SUPREME CAKE

    1/2 cup calamondin puree

    1 package plain white cake mix

    1 3 oz. package lemon gelatin

    1/3 cup milk

    4 large eggs

    3/4 cup cooking oil

    1 tablespoon fresh Florida lemon juice

    Make calamondin puree by cutting fruit in quarters, removing seed and running it through blender.

    Mix cake mix, dry gelatin, milk and calamondin puree together.

    Beat eggs, oil and lemon juice together. Add to cake mixture.

    Pour into oiled and floured 10x4x 1/2-inch angel food or bundt cake pan.

    Bake in preheated 350 degree oven until a sharp knife comes out clean.

    Carefully remove from pan onto cake platter. While still warm spread with glaze.

    Glaze recipe:

    1/2 cup calamondin puree

    4 tablespoons butter or margarine

    1 tablespoon fresh Florida lemon juice

    2 cups powdered sugar

    Spread icing over cake and place a pecan half over each serving. Garnish with thinly sliced calamondins or calamondins cut into flowers and mint leaves.
