Happy memorial day weekend all,
Travis turbo today, got some big beef ribs for tomorrow, and I'm thinking of finishing off with a brisket!
Butt pics today. Asked the butcher at HEB to keep the ribs full length with Chuck on. I'll cook those tomorrow since they are a different temp.
I hope the photos come out right side up.

I'm in in the austin area, steiner ranch.I saw the meat cooler had some beef chuck short ribs, individually cut to about 3 inches in length, I asked if they cut those locally, and she said yes..So, I asked to see a pre-cut one, and she brought me this... it is a bit more pricey than I would have thought. Its about 7 inches by 12, and 2 inches thick, 4.5 pounds.+++++++++++++++++++++++++++Austin, Texas. I'm the guy holding a beer. -

After a 2 hour ftc - pulled easily, bone slid right out. Made carnita tacos - corn tortillas, guac, queso cojita, cabbage with lime, pico de Gallo and salsa. ¡Que Bueno!
Mucho mas leftover for tortas y tostadas.
