<DIV></DIV>
<DIV>· Hot'n fast, 350 for 3 hours to internal to around 160, then wrap in foil and 2 more hours to 195/200 and then let it rest for an hour or so wrapped in towels in a ice chest. Falls apart and oh so good! Have fun!</DIV>
<DIV>· Be sure you only get a 7lb (each) butt or so for the time (or a couple )</DIV>
<DIV>. Note: The butt box is not required. </DIV>
<DIV>I use mustard & Bad Byron's Butt Rub (both not required). I put on the rub, then mustard, then rub once more. </DIV>Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -

Can't you fit twelve on an EXLarge ?

I don't think unless they are all touching or laying against each other, will that cause any problems? I've done twenty on my cabinet smoker I built but think they taste better done on the egg.Herrin,IL.

If they are touching just slightly - no problem because they will shrink during the first hour. I have done seven, seven pound butts on my large egg using the teired grid - two levels. Four on the gasket level and three overhead on the upper grid. Knowing how different butts cook - timewise - i would not make "size" a major issue -- but i would overcook them somewhat, and then check them with a therapen before wrapping them. I pour the smoke to them on the un-wrapped or first part of the cook. And to maximum their exposure i cook as low as i can until i reach 160 internal degrees. I get two good hours of smoke(pecan).. Good luck and enjoy the food !
