I have been injecting butts for a while, usually just before putting on the Egg. Is there any advantage to injecting well before the cook?

ccrider,[p]I usually inject 24 hours prior to the cook. I am injecting 3 butts tonight and rubbing with dizzy and letting them rest until tomorrow night. Looking forward to my first night with the Guru.[p]The Hulk

the advantage, if you're using a cider based injection, is that the acidic nature of the juice is helpful in tenderizing the meat. that happens over time.[p]I'm injecting ribs tomorrow morning for a saturday afternoon cook. I'd do it today but I don't want them out for two days.[p]best, HS
