It's a cross between cornbread and creamed corn. Really great cool weather comfort food. We eat it alone, under beans or put it in the bottom of a soup bowl.

    My family has been doing something like this for the last 15 years on Thanksgiving. We call it Corn Spoon bread. By far the side dish hit year after year!

  • Great dish, only thing we use canned corn for! After we discovered frozen corn, which the family likes much more than canned corn, we had a couple of tins of corn in the pantry. SWMBO found this recipe and the Jiffy mix was on sale 2 for $1 at Freddy Meyer's. Thanks for reminding me it is time for corn casserole again...
