When I'm running stoker I have DFMT about a 1/4" open no matter what I set stoker temp.
-
It almost doesn't matter, but 1/4" as Outlaw77 uses, is fine.

...that is, unless you use a partyQ. Then it matters.

Thank you both!

I haver a similar device and I always leave it a crack open because I think it keeps the fan from running excessively and if it were ever to peak quite a bit over the set temp the fan may be off long enough to smoother the fire. Maybe I am paranoid but it seems to work.Gerhard

Carefull not to have too much lump burning when you get started. I light a small amount of lump, set my target temp 20-25° below my actual target temp for the first 30 minutes. What can happen is you start your lump, the fan gets a big fire going as the temp comes up but then you have a good amount of lump burning making it difficult for your Stoker to get under control.

I was considering manually stabilizing dome temp at 250 then install the blower and power up the stoker, hopefully that limits the overshoot

Yeah, I just light the center top. You should let it slowly come up to temp. Start your stoker before you reach set temp. It's a good idea to let the stoker run for 30 minutes once you hit temp and make sure the bottom damper is set so it doesn't overshoot and the fan runs intermittently (not constant on or constant off).

That will work. I use my Stoker 3 times a week for the last year and love it. Do you have a data logger program?I was considering manually stabilizing dome temp at 250 then install the blower and power up the stoker, hopefully that limits the overshoot

I use the Stokerlog for my data logger. It shows me how often/ how long my fan is running. That helps me decide how much to open my daisy wheel.

I do not,yet..I will look into stokerlog

Apparently stokerlog does not play well with macs, back to the drawing board.

I have two apps (stoke master and BBQ monitor) for my iPad and iPhone. I like the BBQ Monitor the best.

I have had my Stoker about 3 years and love it.......start fire on the top in the middle, turn on Stoker and when I know a couple of pieces of lump has started, I put in place setter, rack, Stoker pit therometer, close lid and wait until temp gets close to target temp.......I then turn off Stoker, load meat, close lid, turn Stoker back on and let the Stoker and XL Egg do their thing......I also use the BBQ Monitor on my iPhone for following the pit and meat temps......I can even adjust the pit temp if needed from my phone.......with the BBQ Monitor you can also track the cooking history

Stoker log does not work on a Mac.....if you can download the BBQ Monitor you can view the history just like the Stokerlog
