temp difference

When Smoking Bb ribs low and slow do I cook by dome temp or temp at the grid? The dome temp by the dial thermometer is at 300 deg and the temp at the center of the grid is at 188 deg.

    My dome temp and grid temp is always a whole lot closer than that.  They are normally only 5 or 10 degrees different.  You don't have the grid probe touching the ribs do you? 

    If the grid temp is correct use it.

    or maybe your dome temp needs to be calibrated

    +1 with checking the calibration.  Believe your indication unless you have reason to doubt it-which in this case you do.

    Probe for the grid and the dome are fluke bead thermocouples, and the dial has been calibrated to boiling water.
