I could not think of anything to rival Travis on a game hen and asparagus cook :-)
Pretty simple. Hens stuffed with lime slices, sprayed with EVOO and dusted with Treager Sweet. Asparagus sprayed with EVOO and sprinkled with salt and Treager Souvlaki.
Done indirect on a rack at 400 for 40 minutes until internal was in the 180's. Asparagus went on a rack under the hens for the last 10 minutes.

That is an All-Clad roasting rack. I got it either at Williams Sonoma or Su la Table. Don't remember which.

Doc, looks wonderful. I'm new too and also curious about your setup. Did you place the all-clad roaster on your grid (without plate setter or similar)?

I just set it on the grid with about an inch of water in the pan. I wrap the pan in foil to keep the sooty blackening from getting on it, which makes it easier to clean. You don't have to wrap it in foil, it cleans up with a little elbow grease.
If I am putting something like potatos in the bottom, I use the plate setter.
