Brisket & Butt - Son's 3rd Birthday

Planning on doing a brisket and butt for my son's 3rd birthday on Saturday.  Need to have the food ready by 3:00 PM.  What time would you put on the egg?

Brisket is about 10 lbs (packer, but actually seems to be a bit light on the fat; almost seems trimmed).  Butt is about 9 lbs.

Have a large; so butt will go above the brisket on the adjustable rig.

    Can't comment on the Brisket...Butt @ 250 dome figure on 1 1/2 to 2 hrs per lb. Pull @ 195* internal. Wrap in HD alum foil and put in a cooler wrapped in towels till your ready to pull. Put a towel in the bottom of the cooler. The butt will keep in the cooler for up to 4hrs. Happy B'day to the young'un.

    +1 on what Buckdodger said, but i would put it on at least 20 hours before. Wondering if the food will be done in time is not something you should have to worry about on that day.
