Quick question: I've done a few 5 to 6 pound Boston butts and they turned out great. I'm feeding a larger group for a tailgate this weekend and bought an 11 1/2 pound butt today. Is it better to cook the entire whole butt or would it be better to cut it into two separate pieces so it might cook a little faster? If it is cut into two pieces will there be any degradation in quality? or, do larger butts generally taste better?

Remember you are competing with the No Fun League tonight-my opinion (and we all know what those are worth:)) I would cut in half -more bark, and faster cook time (to a degree).  Largest I have cooked is around 10#'s and never noticed a taste difference with the smaller cooks.  Pork is very forgiving that way.  If you "halve" then remember each will behave on it's own and likely finish at a different time.  FWIW-
Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

I thought that more bark was a good thing....as long as a 5 lb butt isn't less juicy and tender than a larger cook, that's what I'll do. Still trying to decide if I should rub tonight, or wait until an hour or so before throwing on the grill tomorrow. Thanks for your help!
