On the digi q it reads 197but did thermapen in other parts and reading around 190, 192, 189, some parts are 195-200. Should I pull it and wrap in foil?

I think you should pull and wrap.

Cen-Tex is the guru, but I think you are close enough to the temp you want. Did the thermapen slide in and out with no resistance? You are cooking to tenderness.
