We are limited to wild game, seafood, goat, and lamb.
Any creative ideas? Also needs to be somewhat of a quick cook.

Charbroiled oysters, roast leg of lamb or goat, some type of wild fowl. That's the approach I would take. You can do all 3 in a relatively quick time and can get creative with option 2 or 3
