Time vs. Tempurature Chart for a Pork Butt/Shoulder

A little time vs. temp chart from the pork butt I did a couple weeks ago.  Figured it would be a good reference for new people on how meat behaves in an Egg.

Note:  All meats behave a bit differently, even though they are the same cut.  Use this for reference only!


  • What was the grill temperature and weight of the shoulder?

    Grill @ dome was around 250ish give or take 20 degrees.

    I think the shoulder was in the 7.5 to 8 pound range.
