I just got my platesetter (on back order for about a month and a half) and am looking forward to doing my first indirect cook tomorrow.  Any tips for an "easy" first cook?  I was playing with the idea of buying some ribs, but don't know if it'd be safer to start with chicken.  I have, I think, a pretty decent handle on controlling the heat on my xl...

Cover the platesetter with foil. Even if you use a drip pan you dont want the burnt drippings to create off favors later when you use the platesetter again.

I went with baby back ribs for my first cook on my egg.     Was amazed at how they turned out for the very first time using the egg.    I just made sure I controled the temp early and kept it low rather than let it get away.   Was fun and I learned a lot since I had time to work with it.
