Looks great. Nice wrap job. I did a few stuffed pork loins wrapped in bacon and they were good.

People forget about that tenderlion. Very nice. On the next one think about putting some cheese and jelly or pepper in it and doing the same way. Real nice job.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

I started this cook direct at 375. I turned it every 3 minutes for about 18 minutes. This got the temp to about 135 internal.
After 18 minutes the bacon was not yet crisp, so I cranked up the temp to around 500 and continued to rotate for another 10-12 minutes until all of the bacon was perfect, and the internal temp was 150.
There was definitely a risk of overlooking doing it this way, but it worked out really well.
