Coconut oil

Last night we did leg of lamb. This time slightly different.
1/2 cup of coconut oil
6 minced garlic cloves,
Finely chopped rosemary and mint
Applied 3 hours before the cook
Heated BGE to 300
used maple wood for smoke
cooked 2 and half hours till meat temp was 130
Even the Grandgirls thought it was delcious..
Going to try chicken or turkey using the coconut oil as it has a very pleasing taste as well as a wonderful aroma.

Love coconut oil and use it frequently. The best is the unrefined/unprocessed oil, which retains more of the coconut flavor.
