So at just over 3.5 hours and temps between 237-250F grate, meat is at
131F already. Seems like it is going faster than I would have thought. I
was hoping to be done about 8 AM tomorrow. Butt is about 8.5 pounds. So
I was expecting 16 hours or so. Any ideas.
Oddly my dome temp
and grate temp are almost identical. Cooking indirect with plate setter
feet up. drip pan full of apple juice. Dome temp probe has been
calibrated in boiling water

Ya, they can be all over the place. I put a brisket packer on two weeks ago and it hit 180 very fast and then stayed there for multiple hours. You just never know, meat texture, fat content etc... all effect the cook. No exact science with these things...

It did get done pulled it off the GBE at 196F
Odd experience overnight cooking with nothing but a Mavic 732 on your night stand. I think I checked it every 30 or 40 minutes. Every time I hit the light button the dam thing beeps. Think the wife was getting annoyed. It hovered in the 218-225 range most of the night at one point dropped to 203 so I got up and opened the vents some. I was truly low and slow on this 8.5 pound butt. Just about 18 hours then wrapped it in HDAF and towels for about 1.5 hours. Could not wait any longer.
Tastes great.
