Sorry, I've done them once bf, tried to search the forum for info again, but the forum search help me. I've got a couple of rib eyes, 1 1/2" thick. What temp, how and for how long? I bought some Dizzy Pig dust today, but I doubt if that would be good on them?? Tx, I'm sorry to bother you guys, but the forum search sucks. What temp for medium rare?

I get the egg to like 700 or so, sear for 1.5 min each side, then pull the steaks and close vents until the egg gets down to 350-400. Then finish cooking to medium rare about 125 internal (with a 5 minutes rest, should be about 130 when you start eating). Bringing the egg back down usually takes 10-12 minutes.Packerland, Wisconsin
