Pick your rub and no oil. I spatchcock and cook direct at 375/400 on a raised grill. I like 12 pound birds and they take about 1.5 hr. Cook to temp not time please. Use VERY LITTLE wood, very little. I like chips of cherry and pecan mixed. Also if time I leave the bird uncovered in fridge overnight.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

We have only done two turkeys, but we brined them for almost 2 days, then cooked them upright on a Sittin' Turkey stand. Rub the outside with olive oil for a nice golden color. Absolute poultry perfection!

The recipe for a brined and smoked turkey on the BGE website is a real good one...Did a 12 pounder for Christmas and my wife made me do another one 3 days later..
