Doin a turkey today for dinner. Have thermo's in both breasts to check
temp. Is it common for breasts to be at different temps? I am showing a
15 degree disparity in current temps meaning the hotter breast will be
done much sooner then the other breast. Should I try rotating the bird
or something. Also I am spatchcocking but discovers some unburnt wood in
the charcoal so getting a decent smoke as well. Ugh. Assuming this
won't hurt anything either. Little smoke on top of grilling.

It can't hurt turning the bird. The back of my egg seems to cook a little hotter then the rest of the egg. I almost always rotate my grate whether I'm cooking direct or indirect. I find this to be the easiest way to rotate anything I cook unless I have some kind of cookware involved.  While I have never cooked a turkey, when I do spatchcock chicken I always rotate the bird.
