First time egg user, help!

I just got a big green egg as a gift from some friends. I want to use it tonight to cook for a few guests. The girls are fairly picky so I decided to get Salmon. I was curious to see what you would suggest the best way to cook the fish on the grill. Also, what do you suggest for seasoning on the fish.

Make sure you let the smoke clear to invisible or light blue before putting the fish on as well.

Alternate idea - soak a cedar plank and cook the fish on that. I put a mixture of brown sugar, ground ginger, soy sauce, veg oil and whisky on them as a marinade. cook at 350 for about 30 minutes. Good for salmon steak or filet.

I like my salmon low-n-slow about 250º for about an hour, indirect using maple or oak chunks.
Seasoned with sea salt & fresh ground pepper and a drizzle of maple syrup for the last 15 minutes.
Never eat anything passed through a window unless you're a seagull ... BGE Lg. -
