First Overnight Low AND Slow (PICS)

Well my first overnight cook was a great success, cooked a boston butt for about 15 hours. I also added on some ribs on Saturday morning for about 5 hours and everything was awesome. Sorry I do not have all the detailed photos but we had about 15 people show up around lunch time for a pool party. I have order the Maverick two probe monitoring thermometer so I can have some peace of mind at night for my next cook - hopefully this weekend. Started with a 250 temp Friday night around 9, at 3:30 I woke up for a check and was about 220. Made a minor increase and woke again around 7 and temp was around 260 so not too bad for a first timer. Cooked the butt until about 1 Saturday afternoon, wrapped it in foil and stored it in a cooler until about 5 and the meat temp was still over 150. Then it fell off of the bone and disappeared.

    Is it just an illusion or is your cast iron fire grate missing in your last pic?

    I'm right with you. We smoked a whole pork shoulder this past weekend. Mixed BGE charcoal with soaked hickory wood chunks about the size of baseballs, probably six to eight of them. 18lb shoulder, kept between 225 and 260 for 18 hours. Never had to add any more coal or chunks. Pulled it a 200 degrees, wrapped it in foil, dropped into a dry cooler for about four hours until the temp dropped below 150, then pulled everything apart. Easy as pie. 
    Funny note- I set up a internet web cam to keep an eye on the temperature while at a neighbor's house for dinner. Once we got it dialed in, there was little else to do.- Vance K.

    I can't see it either. Check your packaging. I bet you overlooked it.

    Looks great, what did you stuff your bacon wrapped jalapeno's with?

    Looks like you have a  great table and I like how you created hangers for plastic bins under the bottom shelf.

    Well this is my HOLLAND grill I have had for 14 years and it was great until the EGG but I will still use it for burgers and dogs.

    Looks great, what did you stuff your bacon wrapped jalapeno's with?

    Looks like you have a  great table and I like how you created hangers for plastic bins under the bottom shelf.

    I stuffed the pepper with some roasted red pepper dip my wife picked up at Wal-Mart, they were awesome.... As for the table I made it - just need to add a protective coat to it and it will be complete.

    No illusion - I meant to comment on it, I forgot to add the grate back after a cleaning so I had to unload and start over.... Lesson learned..
