Hey Hoss.....Bride is gettin ready to blanche some fresh okra!! Man, with some of those creole tomatoes & EVOO & Vinegar, KILLER!!

Try throwing a few pieces of Okra on the Egg, wrap a couple in bacon, see what you think! :)
  • transversaltransversal Posts: 719
Sounds like a plan, Capt. Frank.......Not sure we have any bacon on hand, but if we do, I'm gonna give it a shot. Those birds sure smell good out back......

I did it a few weeks ago, it was OK, but I did not cook it long enough, so it was a little tough. I need to try it again, maybe blanching first would help :)
  • transversaltransversal Posts: 719
Well, out'a bacon here friend, so gonna wait on the grilled version. However, it's been blanched and it's chillin.....doesn't take long to blanche it.....but, I'm lookin forward to this big time....chicks are gettin golden brown, as I can spy at'em thru the chimney. If I'm not careful, this is liable to be the 4th KILLER cook in a row. Kids are makin some fresh peach's only 98* on the patio....all's is good. ;) ;)

Rezen, that's fried Okra. Hope all is well your way, friend. Did you have a restful weekend?
  • transversaltransversal Posts: 719
It was, Capt. Frank. Hope you had a good one, too, podner.

Oh, never seen Okra fried whole like that - it's always been but when I've had it. Awesome, will have to give that a go!

Weekend was ok. Not restful at all - been super busy! Heading back to Houston in 1.5 weeks for a training course (and to visit friends & family). Looking forward to it.

Heh, was just talking to a buddy of mine today about our trip to NO last Halloween... he lives in Covington, just across the lake! Had an incredible time.. Bourbon Street was insane :D

Joan, adoption can be arranged. Just not sure you would wanna hack the climate we're having over here right now. You are either wet from perspiration or deluge, but either way, you're always wet. I'm up to about 6 showers a day......I can't even stand myself!! Been giving thought to sleeping in the freezer tonight. But, provided you bring along your rib skin pullin pliers, I'll get get the papers in order.

I'll tell ya how bad it was today......almost 100* on the patio in the shade. The neighbors cat smelled the chicken cookin and came over lookin for a treat.....he peed on my boot!! Nah, I don't have the slightest idea what his problem is, but he's pushin his luck. Needless to chicken for him.

So how did the chicken turn out? Any finished pics?

  • Griff, to be honest, when it came off, it was like General Sherman going thru Georgia. No time for finished pics, but the chicken was outstanding. Might'a been my best ever. Okra & creole tomatoe salad was killer, too. Darn near wiped it all out. :)
