Stuffed Poblanos

Egged up some stuffed poblanos for the first time ever last night. I started off by cooking up two bone on chicken breast with cherry smoke, on a raised grid at 400 degrees. I then shredded up the chicken and added it to a bowl with a block of softened cream cheese. Added mexi corn, black beans, and shredded cheddar to the mix and stirred it up real good. Stuffed the peppers with it and sprinkled cayenne pepper on top. Went back on the raised grid at 350 for about 15 minutes. We ate them with a fresh salad. They were very good and I will be adding them to my rotation of things to cook. Have a great day!

Sorry. I went back and edited my post. Thought I had it in there. I cooked them raised at 350 for about 15 min.

They are worth the try. Pretty simple too. One could add about anything he wanted. I started to add some rice. Wish I had.

Really looks good..yum yum. I think poblanos are the best peppers for stuffing. Much better flavor than bells.Large, small and mini now Egging in Rowlett Tx

Dang those look good! I am a sucker for any sort of Mex or Tex-Mex food. I've tried chile rellenos several times but I can never get them stuffed (after roasting and removing the skins) without the pepper blowing apart. they are still good, just messy

To be honest with ya, I didn't remove the skins. Half of it kinda flaked off while on the grid, but I didn't go out of my way to get it off.
