I owe a thanks to my fellow eggers, I had no idea until searching for beef ribs that they needed to cook until 190 degrees. More then half of these when I grabbed the meat to take them off it left the bone still on the egg. They cooked at 250 for 4 hours and then 30 more minutes with sauce on a few and then let them rest for 15 minutes. Final temp was around 195
