Anniversary fun and fresh salmon! Pic-heavy

We started off our special day with a half-day of fishing. We are enjoying the new boat and Dave landed a salmon that we ate for dinner. We started with my favorite... Grilled romaine on the small, evoo, red onions, red pepper, bacon and a splash of niaggara balsamic. Hands-down always my fav on the egg. The salmon was (like the trout I did a couple weeks ago) stuffed with lemons, butter, minced shallots and capers, and rosemary. This was non-native Atlantic (landlocked) salmon. It was light pink in color; grilled indirect at 350 for about seven minutes a side. Coated it with a light layer of mayo so it didn't stick. We finished with a porterhouse and grilled banana and ice cream for dessert!

Sheepdog; thanks! Very easy. Half the romaine heads. Drizzle with evoo, sprinkle with parm and S&P. Grill indirect (350'ish) each side til wilted; soft or a little more crunchy, doesn't matter much. Cut off the ends once plated, then cut in chunks. In skillet...I had some leftover bacon crumble in the freezer (keep it on hand for pizzas). Just a couple T's evoo and butter, bacon, red onions, red pepper. Depending on the bacon, it adds a little fat to the oil...add a splash of balsamic vinaigrette and plunk on top of the salad. I don't aim for a sauce here; plenty of oil from whats on the salad, then the oil/fat from the skillet...prob not the healthiest, but amazingly good. The taste of the romaine changes entirely with the grilling. Try it!

Fishlessman, we fish in lake Champlain. We have our boat in a marina about 20 minutes from home; first time being on a dock and not trailering...we love it! Half-day? 7:30 till noon maybe We went out again tonight and got two more salmon!
