Memorial Weekend Candi Salmon

Well now the Copper River Salmon is coming down in price I thought I would make some "Candi Salmon", started off with a couple of 5 lb Sockeye and brined them last night and now air drying them with the help of a fan here area couple of pics more to follow when done!

Well it is all done see pics bellow,
Recipe is very easy,
2 1/2 cups water
3/4 cup Sea Salt
1 cup Dark Brown Sugar
1/4 cup of good Maple Syrup
2 Tablespoons Garlic Powder
Brine over night and then rinse with cold water and air dry for a couple of hours ( I use a fan during that 2 hr time)
smoked with Alder and Maple in a Bradley Smoker for about 6 hrs at 130 degs
also at about 2 hrs in I glaze the fish with Maple Syrup and Honey and again at 4 hrs,
and it is very tasty as ai ma having some as I type!!
Smoked Sockeye, Horseradish Cheddar,Green Onoin,Pita Crackers and a cold Brew!!!
