Do you brine a boston butt before cooking? Seems like a lot of trouble, just wondering if its worth it. A friend, who is well known for his cooking says he has never used brine and wouldn't go to all the trouble.
I've got the time if it makes a big difference. Would like your opinion.

You could inject it but a brine might give you too much of a cured or ham flavor.

A brine will turn it into buckboard bacon. We do them on occasion, but it will change the flavor. If you haven't done one yet then I think you should try it at some point.
