simple Mother\'s Day lunch

Prep’d a two boner using RRP’s 'secret' rub …
Progressively bumped temp from 250 > 275 > 300 > 325 > 350 for perfect end time (wife has to work this afternoon/evening and son going back to college) from the comfort of my keyboard wirelessly.
Done, pulled at 125, medium-medium-rare.
Grilled some baby bok choy (simple evoo, s & p) while roast was resting, excuse the blur
Plated with au jus (pan drippings, flour, wine and beef broth), bok choy and oven-baked sweet potato fries w/ curry mayo. (recipe below)
cook's dessert
Sweet potato fries:
4 sweet potato
2 egg whites
1 TB veg oil
1 ts roasted ground cumin
1 ts paprika
1/2 ts salt
1/2 ts fresh ground pepper
Wisk egg whites until frothy, mix in oil and other dry ingredients, coat sweet potato. Bake in 425F oven about 30-35 minutes, mixing/rotating couple of times.
Curry mayo for dipping:
1/2 cup light mayo (I used regular)
1 ts lime juice
1/2 ts mild curry powder
