I cooked this tri tip last night. I hit it hard with olive oil and Cowlick rub. I cooked it direct at 400 with 4 doses of mesquite chips along the way. Beef + mesquite is where it's at!
I don't think there is a better cut of beef. It was tender as filet and as flavorful as brisket.

It obviously varied due to the shape. It was 135 in the coolest part, 150 in the tips. I like it medium, and don't mind if it's past medium. Scott
