You should be fine. I have planked salmon on Alder, Cedar, and Maple.... I have not tried using hickory myself, but two weeks ago a friend gave me some cured and smoked salmon using hickory that was really good.

I made these on a cedar plank last Saturday
    DSC03506.jpg

This marinade was on the package of planks:

    Salmon Fillets 2 lbs.
    Vegetable oil 2 Tbsp
    Soy sauce 1 Tbsp
Chardonnay, Bourbon or Whiskey 3 Tbsp
    Ground ginger 1/2 Tbsp
    Brown sugar 1 Tbsp
    Pepper to taste

Marinate salmon in this for 20 minutes and glaze after about 5 minutes. Direct, dome about 425ish
    drizzle with lemon and eat.

I don't really like fish but I love this.

You can certainly use a cedar plank. Lots of folks do. If you come across some alder planks, tho, snap them up and give them a try. Smoking alder smells a lot better (to me) than smoking cedar.

Real cool Dan.... ;) I was trying indirect on that cook, and found it didn't cook as well as direct...but that was the only salmon pic in photobucket...will watch out though for the forum detectives in the future! :woohoo:
