JH Pecan rubbed and pecan smoked BBB
Apple, cinnamon, pecan pancakes
Used Bisquick and substituted the milk for two apples that I pureed in the beast (Vitamix). Adjusted batter with a little milk.

I could chomp down on that for sure. Breakfast is my favorite meal. I could, and often do, eat it more than once a day. After looking at your photos, today may be another one of those days.

Some lessons learned
Six to Seven days is plenty for the cure
I do a rinse soak for 30 minutes and repeat three times
I have tried several combinations of rubs and smoke - my favorite is John Henry's Pecan rub mixed 50/50 with brown sugar and smoked with pecan chunks.
Coarse Black Pepper is nice as well
Injected with and soaked in some nice Canadian Maple syrup would be mightyfine
