following julie's footsteps, i put my modified chick stand to test...
used this Peruvian chicken marinade recipe, but also added 1/2 ts onion powder and 1/8 ts cayenne...http://www.epicurious.com/recipes/food/views/Peruvian-Grilled-Chicken-239923
stood the chick up upside down easily, in bondage of course...
no bouquet of herbs, just two lumps of fat for lubrication...
breast side...
the other side, ooops i heard an explosion...
assessment: chicken was very moist with crispy skin, legs and breast done at same time. this recipe is a keeper but i'll cut down the cumin a tad. bondage is not good, the cook took 1.5 hour even at 400+ i think when it's bound so tight it behaves like a hunk of roast and can only cook from the outside.

trust me Molly they were poked, perhaps the fat vapour sealed the holes! it added a dramatic ending to the cook though :P

Try it without trussing the legs. You can even slice the leg/thigh joint. It isn't meant to be pretty.

Steve, yup i learned the hard way, may still tie the legs but not so tight that the cavity is completely sealed.

Julie, that's how the chicken was tied out of the package, i saved the loop of twine and reapplied it the same way, won't do that again as the cavity was completely sealed and the cook took too long. yes that marinade recipe is really nice. btw since LS innovated the ks chicken i think it should be renamed as...never mind.
