OK amazing how much a Brisket will shrink... My 11lb brisket started like this:
Then became this after 12 hrs or so:

It was YUMMY!!!!

I'm always amazed at the shrinkage, but goodness there is nothing better than brisket! It looks very good - I'm sure you enjoyed it.

Thanks - it was.. Got alot of hickory flavor this time. Put chips at the same time as the brisket.

This time I used Dizzy Pig Cow Lick rub.. Was really good on the brisket.
I did 230F until the brisket hit 170 and then I double wrapped it up in foil with a few ounces of stock I had mixed w/some Worcestershire sauce. Then pulled it at around 200 wrapped in towels and placed in a dry cooler for a couple hours. I used big pizza stone for indirect heat with a rectangular drip pan with foil on top to try and deflect any direct heat from the sides. Oh yeah - hickory chips put on at the same time as the brisket.
I have a really nice Wusthof Culinar 8" cooks knife I got as a gift a number of years ago. It is kick but good. I have a Wusthof Culinar carving set, a paring knife and a utility knife all excellent. -
