This is a pic of the nachos I fixed SuperSunday.
And this ia a jar of Dutch Eggs I made this afternoon after our 4"-6" blizzard started.Beets,onions,Hard boiled eggs with spices and vinegar and sugar.

Nachos look good. Wife used to make pickled eggs - I never would eat 'em.I hate it when I go to the kitchen for food and all I find are ingredients!

Hoss good looking nachos but what is the red eggs?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Sure,I used....
36 medium,peeled hardboiled eggs.
2 1 pint cans of sliced beets
1 medium sliced onion.
2 cups apple cider vinegar
2 cups sugar(brown or white)
1 stick cinnamon
1 teaspoon whole cloves
3-5 slices fresh ginger root
1 teaspoon black peppercorns
1/2 teaspoon sea salt
Drain beets,reserve juice.
In a large saucepan,add beet juice,vinegar,salt, sugar and spices.Simmer til sugar is dissolved.Alternately place eggs,beets,some of the onions into the jar,repeat til used up or jar is full..Pour hot mixture over contents of jar(you can strain if you want,I did not)til full.If you do not have enough liquid to fill jar just add equal parts ACV and dissolved sugar til you get it full.
Refridgerate and DO NOT TOUCH for AT LEAST a week.A month is better.Be sure to keep refridgerated.
I could have linked it but I combined about 3 different recipes to come up with this -
Beets,onions,hardboiled eggs soaked in cider vinegar,sugar and spices.They are called Dutch eggs.Just tryin something different. Thanks,the nachos were really good.

Hoss, I use to frquent a bar that left a jar of those eggs in the corner for feeding.......those look a hell of a lot better. Nachos, no words needed.

Hoss, those nachos look like something from an advertisement... you know, always 10 times better than what you could actually order at any establishment.
As far as the dutch eggs go... never heard of such a thing... but that doesn't matter cuz I'm one of those weird dudes that really likes pickled eggs. Gonna have to try that one sometime... bookmarked, thanks! -

The eggs look good, Hoss. Thanks for the recipe. Wonder why they are called "dutch".Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

The first recipe I saw for them was called Pennsylviania Dutch Eggs and another one was called Amish Dutch Eggs.The recipe stated that they were a big hit at picnics in the "Old Days".Another one said they were great cut/chopped for a salad topping.I just thought they sounded good.

we call 'em "pickled " eggs here in NEPA..... thanks for the inspiration!..... i have not made these in years.... they are standard bar fare in this area.... 2 for 50 cents....ray
