Doing my first brisket as a spur of the moment thing. It's been on for almost 5 hours. It's a 4 lb flat, (I know I should have gotten a full brisket with tip, but this was the option at 1 am last night). Should I start mopping it now? Been 245 degrees for the whole cook so far. Haven't lifted the lid since about half an hour in just to make sure the fire was still burning.

Why would you want, or need, to mop a brisket?

Yeah, it would be about as good a time as any. With one that small, if you have a favorite mop, I would be tempted to add a little oil to it. Are you planning on doing a foil finish on the brisket?

Here is Rick Salmon's Sinful Marinade and Mop for Brisket. It's a good one. Rick uses this mainly as a mop for beef brisket and he will add 1/4 cup to the brisket when wrapping in foil. I use a variation of this (a little thinner), but it's best to start with an original recipe.... then tweak it later if you need to. (and you might not)

    12 oz. can of beer
    1/2 cup cider vinegar
    1/2 cup of water
    1/2 cup Worcestershire sauce
    1/4 cup olive oil
    1 tablespoon beef base
    2 tablespoons barbeque sauce
1 tablespoon seasoned salt or rub.
    1 tablespoon celery seed
    1 teaspoon cayenne pepper
    1 teaspoon MSG

Mix the ingredients and baste as necessary, or add when wrapping at about 165º.
    Happy Trails

First one, experimenting, and don't want to dry it out to much. Only had the egg about a month and learning every cook.
