Fidel, have you changed your MM dough recipe since last year? If so can you share? Anyone else?

I'm going to re-create some of their pizzas for a party this weekend, and dough is their shining star. Thanks, Scott

Nope, I've experimented with a lot of other dough types, but once MM started selling their dough balls the desire to replicate it waned.

I've been playing with a neopolitan dough, but I'm not quite happy with it.

Fine line between usable and too much hydration.

Maybe I need to go to Varasano's for lunch one day to get inspired.

That thing is a thing a beauty and that's why I picked it. I couldn't tie it either. Epoxy is difficult enough, but colored epoxy?? As hard as it was for me to learn and concede, some flies are just better off purchased. I can tie a helluva clouser though!!
