I want to make some pastrami for our christmas party in a couple of weeks. My plan is to just do a flat. The meat will get sliced super thin.
I've looked around, and came across a couple of archived posts by an Old Dave (does it for 4-5 days)
anyone have experiences with his technique or others?
and also.. is there a way to know when it's ready?
