I would wait to slice them. They will be much easier to slice when chilled. How do you plan to reheat them?

Exactly my question...What is the plan for a re-heat? It makes a bunch of difference into the approach I would recommend.

If it were myself, I would chill, then slice, lay out nicely in the crockpot(s), then re-heat with a gravy. Just my two cents.
It will be fine, but please make sure when you chill, you chill as quickly as possible (meaning, put in the fridge UNcovered until chilled, then cover).
