I'm in the drying phase of this recipe that can be found on the Naked Whiz site. I've done this several times. The end products are chunks of smoked salmon that can be used throughout the holidays for snacks and spreads. If you haven't tried slow smoked salmon yet, give it a spin. It's one of my favorites:
