    Maybe better than my butchers case. Heheee.

    I enjoy eating them as much as I do catching them, so it would be foolish not to take care of them. I immediately field dress them and pack them on ice, then debone the fillets the evening I catch them.

    So, yes I did go fishing yesterday, and yes I did cure some trout last night, and by the way I smoked them this afternoon. Also smoked 2 pounds of cheese.

    I square up the tail end with scissors after smoking, which gives me some good snackin'. It went well with some test slices of cheese.
