Keeping brisket before cook

Hello,
I just bought a 12 pound packer from restaurant depot. How long can I keep in the fridge before cooking or should should I just freeze it. I really don't like freezing them. I was thinking of cooking it for next Sunday.

Would recommend the freezer and take out a couple days in advance. If your talking tomorrow your good to go. But next Sunday is too long for the fridge. Hope that helps"The pig is an amazing animal. You feed a pig an apple and it makes bacon. Let's see Michael Phelps do that" - Jim Gaffigan

Thanks.Thats what I figured but wasn't sure since they are packed in those bags so tight maybe they last longer.

If the brisket is still in the cryovac packaging, there is nothing wrong with letting it wet age this week.

Agreed, I very comfortable holding any meat in the frig at 38 degrees or below for 7-10 day after the "sale by" date on the cryovac label...
At times when you open them they have a "smell" that disappears after a rinse in cool water...Kent Madison MS
