Very nice looking dinner!
-
Nice dinner, but it sure doesn't match your signature line!

I would LOVE details on how you did EVERYTHING there. Especially the lobster tail! Did you just start with raw tails? How long of a cook? Direct? Raised? What temp. Same with potato and asparagus - if you don't mind, I'd love whatever details you can provide. The whole meal looks wonderful...

The potatoes were baked at 450 for 1-hour and let cool until able to handle. Then scooped out the insides leaving about 1/4 inch of potato near the skin.
Then mixed in sour cream, cheddar cheese, capers, diced olives & onions.Mixed well and filled up potato boats and packed then down, added a bit of butter on top.And put back on until cheese was melted and potato was heated through
The asparagus.very simple, wrapped in prosciutto and grilled intil just done but a bit crisp. All were done direct at 450'
Pineapple the same.dusted with DP Pineapple and grilled about 4-6 minutes per side or until core is tender.
Shrimp cocktail.Mixed ketchup and horseradish to taste.Chopped up baby romain lettuce and filled martini glass almost to the top.added cocktail sauce on top and then the cooked shrimp. -
Thanks SOOOOO much! I am adding this to my notes.
