Usually when I cook ribs(mainly St.Louis cut) the meat pulls away from the ends a small amount. I've bought 2 racks from a different supermarket(each one vacuum wrapped) and neither one pulled away from the ends like I usually see them do. It doesnt change the taste of the ribs at all. Any idea on why this is happening? Just curious.
Thanks

Have you checked to see if they were enhanced by a solution?
Just curious , because I am not for sure.

Why don't you send him a copy of your rib notes......or, did they get all burned up??! :woohoo: :woohoo:

Where have you been hiding? Rib note burner.

The front of the package says "no artificial ingredients and minimally processed". However, on the back of the package, in small print, says "cargill meat solutions corp".

CWM, have you seen this happen with certain ribs?

Sure I have, and have no answer. The only few things I can think of, is the way they were raised. Fed, ect.
