How long should I let the turkey sit out of the fridge before putting it in the oven/bbq? I do the ice on the breast thing, but should it be out of the fridge longer than just icing the breast or is that 20 long enough?
I'm doing mine in the oven this time and trying a new technique. 25# bird, going into the roasting oven tonight at 11pm for 30 minutes, then into the simmering oven for 16 hours and hopefully will be done around 3pm tomorrow. Word has it among Aga owners that this produces very juicy bird.

I leave all my meat on the counter for at least an hour before cooking. Seems to cook better if it starts close to room temp.
