I have been cooking a Boston Butt at 225 since 3:30 yesterday. Its at 160 now and has just broken through the plateau, as it had been around 155 since around 3 this morning. I have to leave for work soon though and wont be back for 10 hours, so how should I finish it off?
I was thinking about double wrapping it in foil and putting it in the oven at 225 and setting the oven to go off after 4 hours or so. Would this possible overcook it? And would it be fine wrapped in foil in the oven for 6 hours or so after the oven turns off?

That would probably work or you could pull it out now and slice it rather the shred it. It will still be delicious.

My wife really wants the pulled pork, so I'm gonna try the oven. Thanks!

You could just turn the oven on to 200 degrees and you should be fine. Some ovens allow you to place a probe into the meat and automatically shut off when a specified temperature is reached.
