2 8 pound boneless on at same time, 1st plateau for several hours, 1 temp probe jumped to 191 and 2nd temp at 174 been there for 3 hours. Any thoughts. Would you pull the one at 195 on leave it. Went on at same time, side by side, BGE thermo stable at 240. :unsure:

It happens, just readjust the thermo to be sure you are not in a fat pocket. Pull each one when it gets to the appropriate temp.

Also having the probe next to the bone can also give false readings. Check the hot one with the other probe.
