1st Brisket just went on!!

Wish me luck. I have a Large Egg and just put on my first packer brisket. Started at 11 lbs and probably trimmed at least 1 1/2 lbs off. Right now my Maverick ET-73 is reading 250 and my dome temp is 245. I calibrated it (dome thermometer) in boiling water but I suppose it still could be off. My question is do I want to bump that down a little where the grate temp is around 225? I just put it on about 10 mins ago with a chunk of hickory and a couple chunks of pecan. Any help much appreciated.

Leave that dome temp at 250* -- good luck on it.

I would leave it alone and see what she does,good luck and enjoy.
