HOLY COW! Catfish and Shrimp

I've been threatening to do catfish on the Egg for a long time. I don't like salmon so I thought I would give this a whirl. I modified a recipe that found here a long time ago. I used and egg and milk wash with a little hot sauce. I coated the fish with a mixture of 2/3 cup flour and how ever much crumbs about 15 tortilla chips would make. I put the fillets on a raised grid at about 350 to 400. At the same time I put two pounds of shrimp on just dusted with Dizzy Pig. I could not have asked for a better dinner. I didn't even bother to fix any sides. All I need to do now is get my portion control down. I had a ton of left overs!!! Next time I'll take pictures.

    Sigh...that's the truth. I almost burned my mouth on the shrimp!!! :laugh:
