Pork Butt - second attempt

Well, I thought I learned a lot from my first attempt...so I changed the, built a better fire and threw on the butt last night at around 12:30 am.
Woke up once to check it around 3:30 am and all was good...about 148 with a dome temp of just shy of 250.
Now, at 7:20 am, dome temp is still solid, just under 250. We are about 7 hours into the cook and it is already at 195!
The butt was around 6 and 3/4 lbs....so I was thinking 10-12 hours.
Any issues with pulling based on the temp alone and not cook time?? Thanks.

Go by the temp; not the time.

Also make sure your temp probe is not touching the bone and is in the thickest part of the butt for a good read. I removed my first butt at about 200* int., wrapped in HD foil and towels then into a dry cooler for a couple of hours b4 pulling.

Thanks guys.....I think I was just getting a little worried......Now at 198 and it has been on for 8 hours. I guess the last 8-10 degrees takes a little bit of time.

By the way you can wrap the cooked butt in foil and then wrap that in a bunch of towels and put in a cooler. It will stay hot for quite a few hours... Personally I like to let mine rest like that for at least a couple hrs -I think they are alot better.

Is it bone in? You can go to 210 or higher with butt anyway. If it is bone-in grab the bone and give it a litle tug. If it comes away with no resistance you are good to go.

yes, it was bone in....I pulled it and put it in the cooler before I saw your post. But it basically felt like it was ready to fall apart in my hands...so I guess that is a good sign.

Not only a good sign, THE sign it is done.
Wrap the butt in a blanket or a lot of towels, the butt will stay hot for about 5 hours.
Sound like today is going to be a day for some good food at your house.
